Let me start out that I am not that gun savy and just bought a used PM9 (my first handgun). I took it home and took it apart to inspect it and put it back together.
My question is how easy should it be to chamber the first round? When I pull the slide back it gets hung up (not on the slide stop) and I kind of have to jiggle it to slide back forward and chamber the round. Now I'm wondering if I screwed something up when I put the gun back together.

Take out hte magazine, lock the slide open, insert the magazine and release the slide lock. You are good to go.

this.
you can (with an empty magazine) lock the slide back just by pulling it to the rear. then drop the magazine, load the magazine, insert the magazine and press down on the slide stop. voila.

Welcome to the forum! :) Lots of good help and knowledge here. You got a fine weapon! Nothing better for concealed carry. Did you get the owner's manual with it? If not, you can download a copy from the Kahr website. The most important part to know is how to orient the Slide Stop Lever when reassembling the gun, because doing it wrong can mess up the Slide Stop Spring. You make sure you line up the marks on the slide and frame so that the pin goes thru the barrel lug as it should, orient the lever at 4:00 as you insert the pin half way, then reorient it at 3:00 as you insert it the rest of the way. Lube recommendation: a little grease where metal to metal contact, including the metal frame rails, and rub some into the inside of the slide where the barrel rubs and into the feed ramp, light oil elsewhere but none in the Striker Channel. Have a good time at the range getting to know the gun! :)

Everyone should watch the take-down/assembly videos available at Kahr.com for each pistol... under the small pictures. Some use the same video, but the processes are shown in detail with appropriate cautions:

The frequently asked questions are a big help, too!
