Went and found me a ham shank this morning, a ham hock or a shoulder works better, but I wanted to try the shank. Browned it up with the skin on, with 1 cup of chopped sweet onion, 1 cup of chopped celery, 1 cup of chopped red pepper, 1 cup of chopped green pepper, 2 cans of green chiles, 3 cloves of garlic, and my special spices. Added in 3 cups of dry Pinto beans, and 1 cup of dry pink beans. 2 cups of chicken broth and 1 cup of vegetable broth. A tablespoon of tomato paste.Cooked it in the slow cooker for about 7 hrs. Served over jasmine rice, with your favorite hot sauce, and some fresh avocado. Some tomato or some cheese if you like. Some like corn chips also.
