Words to live by right there. If I think something is hinky my gun is in hand. I don't quick draw. I do regularly practice for a clean draw but we the good guy will always be behind. The bad guy has a plan, we can only react. And quick draw isn't always the best option.
Actually exactly the same with a cop wearing a duty rig, they are behind the curve.
Drawing from concealment and getting the first aimed shot off in less than two seconds is certainly doable with some practice.
Using my CM9 and my EDC hybrid OWB holster in an IDPA event (shoot what you carry), I was able to draw from concealment and get 2 center mass hits + 1 head hit on two separate threat targets (with a non-threat target in between) in slightly under five seconds. The stage was strong hand only while holding a briefcase with the off hand and backing away from the targets. Only having 7 rounds to get 6 required hits meant slowing down to avoid a reload, so my time was nothing special.
I look at this question from a different angle. If a gun is concealed properly, it costs some time to draw. However the edge is still with you because of the surprise you inflict due to the sudden appearance of your handgun. Likely a dynamic "Oh s**t!!" for you attacker.
The time factor is why I always practice a few unaimed shots from the hip at a close target. One may not have the time to get in a stance, raise the gun to eye level, aim and squeeze. Under two seconds would be an attainable goal IMHO, depending on how exactly you carry. Some carry methods are quicker than others.
I've had to place my hand on mine like bawanna said 1-2 times, once when being confronted in a bad part of town at a bad time when I had to be there not at my choice. Never had to draw but had my hand on it. This video provided valuable information. These guys have some good videos for the ccw holder from a LE point of view IMO.

I agree with bawanna about muscle memory;thank goodness I've only drawn during matches;drawing my CM9 from IWB under concealment,to full presentation,I can get a controled pair off under 2 sec. ; firing from close retention (draw,present strong hand,with elbow at your side,AKA hip shot) target at arms length,double tap at about 1 sec.,sometimes less if when my joints are limber:)

It's important to remember than when your looking the elephant in the eye everything that can go side ways will.
Adrenaline will make your draw like you never held a gun before in your life.
I've never had to shoot but had a couple occasions where the gun needed to come out. I felt fortunate I didn't drop the darn thing nor did I need new huggies.
Hence muscle memory, when the rest of your body is in complete shutdown maybe the memory will carry the day, or at least we can hope

They are both fast. I had the chance shooting along with Miculek and he was wickedly fast. So not FOS.

LOL That's not our real range, it's down in a lower pasture to the right of what you see with a 30' high bank. We used this when we were too lazy to walk down to the real range, and had horses mowing the lawn for us. Our property goes into the trees behind targets to a high bank there. When I had my knee replaced and couldn't rope any longer. we sold the horses and turned that into a proper lawn.
I've tried to get our horses to mow the lawn but I can't get the bastards to eat in straight rows. All uneven and shoddy looking.
Be a lot cheaper to live with it than buy somebody else's grass for them all the time.
Wife and daughter don't ride a whole lot but neither will part with them for anything.

I usually pocket carry and for that I "stage" the draw by getting my trigger finger on the trigger and using that to "flip" the pocket holster off as I draw....otherwise there is a strong possibility the holster is coming out too and will be flung through the air as the draw is completed. I am pretty fast out of my OWB holster and decently fast from my Safariland ALS holster. I am slow from my shoulder holster. Let's not even talk about ankle carry but that's backup only or when seated.
Draws and dry firing have to be practiced often. Get the draw right and the speed will follow.
If I get a feeling, I don't play Wyatt Earp but get the gun in my hand until the feeling goes away.
The bad guy has a plan, for everyone else it's a surprise party. Quick draw is fine and should be practiced of course but try to avoid it.
